Great ideas - I'll have to try some of them out since breakfast is my worst junk food meal of the day - i just can't get it together in the morning - I am so not a morning person - LOL

For lunch today, I had sardines on whole grain bread from Costco. I get sardines without salt added.

I buy a bag of frozen sweet cherries from Costco. A cup of partially frozen cherries is my dessert. They are like mini sorbets, there is no added sugar and it's under 100 calories.

I have used my Nutri-bullet 5 days this week, I do have more energy and love the smoothies. My husband had one. You get used to the taste if you don't like it at first. There are many recipes, definitely worth getting, especially if you get tired from menopause.

I too like meals which don't heat up the kitchen this time of the year. This week, I cooked a turkey breast in the crockpot. It came out great. I don't know why I hadn't thought of it before. I sliced half of it and froze in in four ounce portions for sandwiches and cubed the other half to add to salads which are my favorite meal.

One day at a time; one pound at a time.

I live in the desert, and summer is "don't heat up the kitchen" season, especially in late afternoon when temperatures peak. I make a lot of one-dish salad meals that can be made ahead of time and kept in the fridge. One of my faves is a pasta salad made with veggies and whatever kind of meat (optional) you want to put in:

1 1/2 c protein - can be grilled chicken, salami, leftover beef or pork, tofu, etc.
10 oz whole wheat pasta - whatever shape you like best
1/2 c red bell pepper, small dice
1/2 c greel bell pepper, small dice
1/2 c sliced scallions (or red onions diced)
1/2 c fresh parmesan cheese, grated
4 TBSP minced garlic
2 TBSP lemon juice
$ TBSP olive oil
1/4 c fresh basil, sliced thin

Cook pasta according to package directions. Drain and rinse in cold water.

In large bowl, mix all other ingredients thoroughly and season to taste with salt (substitute) and pepper. Add pasta, toss, serve with fresh seasonal fruit.

Joy, I love avacado anyway they're prepared. DH & I buy fresh, ripe ones.
I wash the skin with vinegar water, and dry it with a paper towel. I slice each
diagonally, then remove the seed. Put on a plate, with salt & pepper on each,
and eat with a spoon. We eat these with a few low sodium crackers. That is
a meal for us. Delicious!

We've not had these in awhile.

Sounds yummy!

I was given a recipe the other day. Haven't tried it yet, but am going too. If it's as good as the lady who gave it to me claims, I'll post it.

Meanwhile, what the heck do you do with an avacodo? Know as a diabetic, they are good for me, but I just bought my first one ever yesterday....

This is one of my favorite salads, however I add shredded cheese for protein. emoticon

Today, I tried a new salad that is very good. A mixture of fresh spinach and
mixed lettuce~toss together. Add 2 tbl slivered almonds, 1/4 cup strawberries,
1/4 cup blueberries, and top with a grilled chicken breast patty. I used
raspberry dressing~sugarfree. This was a good balance meal for me.

I enjoy "Byrd salad" for breakfast. I do have it made with eggs, but it could also be made with eggbeaters, or some such artificial egg. Whip 2 eggs together, add chopped red and green peppers, onion, tomatos, mushrooms, chopped broccoli, any vegetable you enjoy(. Microwave the veggies briefly so they are more done than crunchy.) Stir lightly. Then you can either put it in a frying pan, or do it in the microwave. I usually do it in the microwave. Slide on to a plate, add a little shredded cheddar cheese, salt and pepper (I use just pepper) if desired. Add a slice of toast and a cup of tea.... Ready to go....

I hope if anyone tries this, they enjoy it. I've never sat down and figured out how many calories, etc, but it's mostly veggies so it can't be that terrible. Now I'm going to have to figure it out!!! I usually have this once a week, not more often because of the eggs.
