this is one I've been enjoying for the last two days. Tofu Ranchero. I like it as a topping for burritos or tacos. I topped my burger with it yesterday and it was yummy. It also makes a good dip.

1box silken tofu
Juice from one lime(or lemon juice or 2TB wine vinegar)
1tea each cumin and dill weed
2TB light mayo (or vegan mayo)
1tsp soy sauce
1clove garlic
.25 cup onion (or a couple scallions)

Blend everything Neil smooth in blender or food processor. Tastes best if you let it chill for a couple hours before serving.

Hi Folks, I'm Amy. I've been a vegetarian since seventh grade. So a good number of years (I'm in my late forties now!) My oldest daughter is vegan, so when she gave up dairy I cooked mostly vegan with dairy on the side for other family members. Once she grew up and moved away we went back to adding dairy and eggs to our diet. lately though I've felt my diet was too dairy heavy. Especialky if I'm restricting calories I tend to rely heavily on dairy to meet my protein goals. I've felt kind of icky and have decided to cut way back and see how I feel. So I'm doing "mostly vegan" these days emoticon I love to cook (and have done so professionally in the past) and own more vegetarian cookbooks than you could believe, but yet I'm still always on the look out for new tasty recipes to try.
