I have been a vegetarian a long time, for the simple reason that I have never found meat palatable. I was delighted to find so many vegetarian teams, and I'm starting with this one. I cook 4 recipes in one day and freeze them in individual portions.
I am on SparkPeople primarily because I need to get my cholesterol and triglycerides down. Since there are few saturated fats in my diet already, I'm trying to watch out for simple carbs, and increase my attendance at Aquacize.
Yesterday was a cooking day, so I now have 23 frozen entrees in my freezer. Lunch has always been my main meal.
