Congrats on you goal to give your family healthier meals. I suggest getting a few vegan/vegetarian cookbooks out of the library. They will help you convert some of the meals your family now enjoys to vegetarian ones. My favorite are Happy Herbivore and Everyday Happy Herbivore. Lindsey Nixon has a web site too. I also like the recipes from fatfreevegan.com. She has a young daughter and tries the recipes out on her first so you know that they are kid friendly. We especially like her Enchilada Casserole. It is like a mexican lasagna. (I usually leave out the black olives because I am not a fan.)
I am new to vegetarianism (if that's even a word). I am looking forward to finding great new recipes and to stop eating meat. It's a bold new step in my family's life, but I believe it's worth taking. So, I look forward to new recipes and people who eat the same way as I do. I don't have one friend who's willing to do this and help keep me motivated. So, thank goodness for this group!!!
