Hey, how's it going?

While my husband is deployed this summer I decided to take on a personal challenge of becoming vegetarian. My first official day was Monday and I'm doing well.

I think it's going to be a pretty easy transisition since I rarely eat red meat, just chicken and that's only about 3 times a week. I'll be trying lots of vegan recipes as well, but won't technically be eating vegan.

Looking forward to sharing recipes and insight!
