try simple meals to start with, it doesn't have to be hard. easy meal... whole wheat tortilla.... 1/2cup marninara sauce, tomato sauce whatever... add some veggies, tomatoes, green or red peppers both... avocados, onion... and a sprinkle of cheese.. bake at 350 for 15 min.
or steam some broccoli for a side dish, use your fave marinade, and marninate tofu for a few hours in fridge fry it up with onion and garlic, only eat about 1/2 a cup... and use firm or extra firm. and if you want make some whole wheat rice. veggie lasagne is easy to make... stir frys are easy..too!!
