Hey everyone! I am a vegan (although I am still finishing off this large bucket of organic honey a beekeeper friend of the family gave me, after that I'll likely be finished with honey.) I love to cook so I find it pretty easy. I don't live in a veggie-friendly city, but there's almost always options when I do happen to venture out to a restaurant.
I have never felt more healthy in my entire life. However, I am vegan because of the moral/ethical issues involved with eating meat (including fish) and other animal products. If we don't respect the earth and those who live on it with us, we will never get very far.
Now that I am losing weight (goal is 20lbs)by eating a completely whole foods diet and exercising daily, I am feeling amazing.
Luckily I have a boyfriend who, although is not vegetarian, is very open to anything I make and loves tofu! He mostly eats vegan except when we go to a restaurant that serves meat. But if he was closed minded to it I would likely just tell him to make his own meals, haha (lucky for him too, I guess :p ).
I'm here because I'm a foodie and am always looking for new recipes. I have a lot that I can share too! I have a few posted on my sparkpage--some of them you can't even tell are lacking in animal by-products!
