CWAITES I like you attitude!
When I became vegan before I did it gradually. The book I used to help me was "the Gradual Vegetarian" its by Lisa Tracy. Its a great book because about 1/3 of the book is recipes and they are grouped by what kind of vegetarian. Level one includes dairy, eggs, fish and chicken, but quite a few those recipes can be made with out any animal products. There is a recipe for an awesome creamy potato soup I love for winter and it is dairy free.
The magazine Vegetarian Times was a great help too there are many wonderful recipes in my collection clipped from their pages.
I think tofu is OK with enough seasonings but there are other meat replacement options that I like better. I'm a fan of TVP you can gert different sizes and textures of chunks and uses it in soups stirfry etc. The local Asian market has vegan seafood substitutes I've been anxious to try some look like squid and some look like shrimp.

You have to be careful aslo because some recipes which say they are vegan are not vegan so you have to read and be careful. Jeremy

Thanks for your welcome.

To get a complete list of vegan recipes in SparkRecipes.com, follow the steps listed below:

1. Click on the "advanced search" tab under the search box.
2. Click on "Vegan" in the drop down menu for "Dietary". This will give you 200 recipes.
3. View Coach Nicole's Meatloaf or any highly rated recipe and look for the "Vegan" tab before the ingredients are listed. Click on this tab.
4. This will display over 3,000 vegan recipes, most likely listed by rating.
5. Click on "Newest" in the drop down menu associated with "Sort by". Now, if you start at the end and go to the most recent recipe, you can see all of the vegan recipes sorted chronologically.

If you are an omnivore, just start with the top 200 vegan recipes. Your vegetarian friends will really appreciate you and your carnivorous friends will wonder about you.

Oh but I think you would like our tofu scramble because even people who don't like tofu have said that they like our tofu scramble. The recipe is on my blog and it is good and we have all different types for you to try. Jeremy emoticon

HealthierNow, I am what's called a 'lacto-ovo-vegetarian' because I still eat eggs and dairy products. I love the Morningstar Farms soy products but have cut back on them because of the sodium content. I eat a lot of salads, peanut butter is used a lot, and all kinds of vegetables and fruits. I have recently discovered hummus and love it as a quick snack with crackers. Still can't get excited about tofu. I've tried it and it was good, but still not anxious to make it a staple in my diet.

We have a very very big garden so we grow lots of stuff but we have had so much rain not much is growing right now because we need more sun but we eat healthy foods and we would like it if more people came on this team and did things. Jeremy

I am mainly trying to eat a herbivorous diet that is low fat and low sodium. Peanut butter and almond butter are gradually disappearing in the refrigerator. Changes are small, but I am trying to hold onto them.

During the summer my focus will be to increase the amount of fresh fruits and veggies in my diet because they are less costly. How about you?

I'm glad more people are posting here. Maybe we can revive this team!
I'm anxiously watching our garden, too. We have a couple of little tomatoes, some peppers, grapes, squash, and one little green bean plant. We've had some nice rain this week that has helped a lot.
You sound like me - I do the flowers and DH does the vegetable garden.
