I have dealt with South Beach. It is possible to deal with it without having everything fresh. I use a lot of frozen produce when it is cheaper. I tend to use more legumes than I have ever used in my life.

There are also links to things like "65 Cheap One-Dish Meals," some of which have to be modified somewhat to bring them up to SparkPeople standards, but if you get stuck, just post a comment for help -- everyone is friendly and helpful here.

I've already had all the bad things thrown at me early in life, so now that those are out of the way, my future should be wonderful.
Hey all, new here to SP and to this Frugal Living thing. I've been making freezer meals ahead in order to save some time and money, but a lot of those recipes are really dependent on high fat premades like cream of mushroom soup and the like, so I'm looking for healthier choices that aren't going to kill my wallet. We had some decent success with South Beach last fall, but it was so time consuming because everything needed to be made fresh on the spot, and most things were pretty expensive for a family of four (basically) adults. My hubby and I have two girls (20 & 17) at home, and a son (16) who lives in Canada with his mother. We're in the greater Seattle area, and I love to cook!
Note to self: Please be patient with me, God isn't finished with me yet.
