You can do a lot with salads and what you have. Or make them into a wrap using a large leaf.
With the herbs I often will use them in spring rolls or tabouli (I use broccoli stalks run through the food processor in place of couscous).
I mostly use peppers in salads or in smoothies.
Have you tried doing an internet search using the ingredients? Like "raw lettuce pepper oregano recipe" and see what you get?
