You can do a lot with salads and what you have. Or make them into a wrap using a large leaf.
With the herbs I often will use them in spring rolls or tabouli (I use broccoli stalks run through the food processor in place of couscous).
I mostly use peppers in salads or in smoothies.
Have you tried doing an internet search using the ingredients? Like "raw lettuce pepper oregano recipe" and see what you get?
I did that just for grins and found many sites. Here's one that has several recipes that look really good - some have chicken or other not-raw ingredients but you can easily not use them or use a raw version:

Looking for recipe ideas, hello everyone just joined today.
I am slowly working towards this way of living, but sometimes run out of quick recipe ideas. We are members of a small garden co-op with 40 members, I get stuck on ideas, there is only so much you can do with salsa and salads, we usually get a lot of Pablano Peppers, green peppers, banana peppers, cucumbers, tomatoes just came in and we have plenty of the basic herbs, oregano, basil, mint e.t.c. It is just a matter of combining what we have and get a couple things from Trader Joes to create a recipe. Thanks for creating such a great group.
