I do have an Excalibur dehydrator and love it! It has several different heat settings and comes with a great "cookbook" that includes recipes for raw foods and yes, these are done on a very low heat. I also bought the nonstick sheets to make fruit leathers. The nice part is you can use it while you're at work or sleeping because it has a built in timer and shuts off automatically so you don't have to be there! It also has circulating air which makes the food dry more evenly and completely to lessen the chances of spoilage .... it's also great for drying delicate things like herbs and lettuce that would be ruined in the oven on the lowest setting.
