My favorite low carb foods are ones that are naturally low carb like snow peas, jicama, celery, and whatever protein I'm looking for: chicken or beef. I like quinoa as my carb source these days, its higher in protein than oatmeal and it cooks up easily.

Thanks! I'll have to check out that blog for it's recipes! I can't remember where I saw it, but recent news stated the benefits of low carb eating, according to new research data! It's no longer frowned upon as it was when Atkins first came out many moons ago.
Thanks for the welcome Kierae! I don't follow any particular low carb program like South Beach or Atkins. As far as low carb cookbooks or recipes online, I like it best when the carbs have already been figured out per portion size. Sometimes I'll substitute ingredients for lower carb ones if the original is a little too high for me. I don't want to eat anything that makes my blood sugar after meals spike. I'm hoping that I can learn more from all in here with their experience!

Hope I can figure out this site. I'm currently only eating the lowest carbs that I can make or find. Regular flour products are out for me, so I've been baking with almond flour and sometimes coconut flour. I have found a number of blogs online where I find low carb recipes, such as mac and cheese, but of course there is no pasta, roasted cauliflower takes it's place. It's really good since I tweaked the recipe to my liking.
