I'm diabetic, and started low carb a little more than 3 years ago. I eat onions, tomatoes, mushrooms normally. I can have green beans, but rarely do. After 1 year of eating this way I got off ALL diabetes meds, and my last A1C was 5.1. My doctor said I won't have to test more than once a year now. This is because mine is lower than hers..lol

Plus it allows you to eat more veggies which help with nutrients, which gives you energy. A lot of low carbers eat any vegetable, and just eat smaller amounts. They tend to be tired all the time.

P.S. I didn't mention greens, because I am on Coumadin. They are great choices though

You can't go wrong with low glycemic veggies and if you can find them organic, that's even better. If your diet allows, berries are low glycemic and packed with nutrients.

Remember, nobody can go back to the very beginning and make a brand new start, but anyone can start here and make a brand new end.

Morticia has given you excellent advice.

I'm diabetic also. Smart carbing has helped my BS and weight. Love the non-starchy veggies. In summer I eat eggplant, zucchini, peppers, mushrooms, some tomatoes, broccoli, cauliflower, spinach, collard or beet greens. At times I saute in olive oil or cook in chicken broth. Love the veggies! Carol

I'm sure your dietitian will have some input on this. I agree - low glycemic veggies are the best. You get the most nutrition for the carbs. Low glycemic fruits are also good too if they are on your plan. Some low carb plans allow them and some don't. It depends on how many carbs a day you are allowed. Nuts and seeds can also be good choices.

Great post HYEGEEK! I love my summer veggies sauteed' in coconut oil...

I also love my mushroom burger... I my marinate my portebello mushroom in Italian dressing. Grill and place that mushroom on one of those Orowheat whole wheat sandwich thins. I use hummus in place of mayo along with lettuce and tomato.. Yummy.... emoticon

I get most of my carbs from veggies. I sauté them in olive or coconut oil. By veggies, I mean summer squash, some string beans, asparagus, mushrooms and other similar things.

I avoid all starchy carbs (rice, potatoes, bread, etc.) and sugars.

I'm diabetic, and trying to eat a low carb diet. I need to know what are the best carbs for you. I'm new to this site, but not to being a diabetic.
