Basically you just modify the diet to suit your own needs. I have hypoglycemia so I have to monitor carbs and calories even though it is not required on South Beach. I eat lots of veggies and fruit and some beans but very little grains as many of them trigger me. I have to concentrate more on low carb dairy than low fat and I keep my carb level closer to a phase one than phase 2. I eat mostly fresh food and don't eat a lot of processed foods. And I don't worry about fat intake as much though I do eat mostly healthy fats.
