I'm a beginner when it comes to canning so this is easy. I have a recipe from my grandma that she called tomato ketchup but by today's terms it is more a salsa. Tomatoes,onions and peppers are the main ingredient. It is a little juicer than salsa but very versatile. As is it works as great flavor for soups or pasta sauce, great over pintos or stewed potatoes. But you can spice it up hot to suit your taste and cook it down to desired thickness. All my jars sealed and it made great Christmas gifts, everybody wanted some. Happy canning.
I have done it twice using the spice mix from the canning company. It is usually near the canning supplies in the grocery store. It is easy and my husband loves it because it has a nice smokey flavor. It was actually the first thing I ever canned! The nice thing about it is that you don't have to peel the tomatoes.
