I'm jealous of how much canning you do! 12 months is my goal, too - I want to see if I can get my consumption of non-local foods down to just cocoa and citrus by canning/ drying/ freezing enough food from around here to get me through to the next harvest, but I'm nowhere close.
I just finished up with our beans. I froze like 54 bags. That should be enough. Just waiting on the corn and tomatoes. My freezer is sooooo full right now that hubby said something about maybe having to plug in the smaller freezer that we use to use.
I love canning, even though it can be a lot of work, but I also just love the thought, that I'm putting by for the winter months. It's exciting to me. I can, freeze and dry, and am almost successful at getting enough for all 12 months! But, alas not there yet. Right now we're harvesting and putting up blueberries. I canned cherries for the first time last week. I'm not sure I'm going to get enough green beans this year though to do anything with.
