Thanks for all you info I've been on the Ball website, very helpful If I can't find what I'm looking for in my cookbooks the web is first place I go. I have a few simple country folk as neighbors with helpful hints also have given me receipes. I have put up so much stuff already can't wait for next year! Just pick 5 watermelons, 1 canteloupe today. I love doing this it's a shame I waited to move to SC before I ever did any gardening, actually never had a place to garden outside, We've put up already apples/applesauce, pears, peaches, plums, figs,green beans, onions, white pototes, okra, tomatoes (not a good crop this year needed rain,bell pepper not good either,hot pepper,
blackberries egplant is late just coming out now, just planted peas and sweet pototes doing great probably be ready next month. Pretty busy for the most part. it's such a blessing to see the fruits of our labor and enjoy eating it! chat soon have a great weekend ya'll...Peace, Darlene

Welcome, Darlene! I'm on my third edition of Ball Blue Book - I bought my first one at age 14 and have learned much by studying them. I think they are essential starting points as they pay attention to food safety, like teaching you why you would never just water bath, say, pumpkin. Once you have learned that, you can recognize the safe and the questionable recipes on the internet. With risks like botulism out there, it is best to know the ground rules and how to minimize the risks.

That said, Ball has actually done a wonderful thing and put the recipes from Blue Book ( and others not included in the book) online at (link at the bottom of post. It won't let me insert it here!) .
At least, I hope it is pretty intact. I can't seem to find references to pumpkin, and this site supposedly covers canning, freezing and dehydrating. Guess I have to look further.
