my biggest challange is time.i have a son who is highly allergic and have to cook everything from scratch,it wouldn┤t be so bad if i could cook ahead or cook double and heat one up on the days time is short but i also have a husband who will only eat fresh and doesn┤t belief in microwaves which would also save time on those days i don┤t have time.i need as much help with this one lol,but soups,omelettes and salads are easy choices when time is short so is pasta.
Quesadillas are great. My oldest daughter loves them, but my son does not care for them. That is our problem, I can't get all three children to want to eat the same things! My son plays hockey so we travel a lot during the winter months. The crock pot saves us many weekends!
One meal I make on quick nights is cheese quesadillas. I use whole grain tortillas with 1/4-1/2 cup of cheese. Heat them up & cut them up into slices. Serve it up with a couple tablespoons of salsa & 1 tbs of low-fat sour cream. For a side dish I serve a steamed veggie or a little salad and a fruit.
Having the time to fix a healthy dinner with 4 little girls is hard. I usually have no problem with simple convenent meals but healthy ones alot of the time require more work and attention. I have difficulty doing this.
