Hi - - I rarely use a cook book so I always seem to have left overs. My husband is a meat and potato person from the northern country so he's not into my using "new" recipies sorta speak. Once in a great while I'll throw in a different kind of meal until it's too late for him to say anything - - he doesn't usually eat much then, but at least I get something a little different to eat for a change. I don't dare try that too often though. LOL.

I went to Barnes and Noble to buy a cookbook for one, but they didn't have one. I have a cookbook for two and that has really helped me. This way I don't have a freezer full of foods. I will sometimes break the recipe down from two to one and that helps too. My problem is portion control. If I make a pot of food, one cup is just not going to cut it for me. So I have to make food for one.
