Hi and welcome. I agree, it is so much easier to cook for more than less. It seems like I've been finding more recipes for just 4 which even helps as it is easier to divide into four containers that way and only eat 1 at a time. Have you checked out recipes on Sparks yet? I'm also...slowly...learning that a meal doesn't have to include the whole meat, potatoes, veggies thing to be a meal. And they say you can't teach old dogs new tricks LOL
I've been a "One" for a long time and have always found cooking a meal for one hard to do. I think it's easier to cook for ten than for one. The problem with that is then not making ten portions out it. Instead always having a heaping helping and nibbling some more while putting the left overs away.
