I am VERY PLEASED to report that I made the meal (or something close) for my man yesterday. It was ground turkey, chili beans, taco seasoning, diced tomatoes and I am not sure what else I threw in the crock pot. He ate a huge bowl.

Good luck and best wishes for your marathon! I can relate to the "heating" versus cooking. One of the things that has helped me immensely is using a crockpot, especially to make yummy soups! As a matter of fact, tonight's menu is taco soup made with 1 lb hambruger (season however you want when you brown it), a can of corn, a can of black beans, a can of kidney beans, 32 oz of tomato juice, and taco seasoning. I just add a little extra water and start the crockpot on low when I leave for work. (I have to add extra water because I won't be home for 9-10 hours and I don't want anything to scorch.) I would like to get a newer crockpot with a timer feature, but it hasn't happened yet. And I will be trying the turkey tacos--sounds easy and yummy!

My "other half" doesn't even know when I use the ground turkey instead of the ground beef. He scarfs them down! LOLemoticon

Wow, I am impressed. I think I can pledge to make this next week. My man will be so surprised and I do in-fact think this is something we can both eat. I will simply season his much more.

My easy recipe is turkey tacos...fast, easy and healthy. I warm my corn tortillas up on the burners & stack on plate, cover with paper towels or clean dish towel, cook up the ground turkey with taco seasoning, serve. If you like diced onion & low fat grated chedder or chopped tomatoes & chopped lettuce just add, a lot of times we just add salsa & cheese.

Hello, I have been a member of SP for a year and have focused on running. My first marathon is Saturday with a goal to just finish.

I would like to think that I can cook some healthy dishes that do not take too long (maybe even something both my man and I can eat). I typically eat something different. This will be a new focus after the race.

Hopeful but a bit lazy emoticonemoticon
