Hi Nae, Is it that your son needs more carbs? If so the rice flours are high in carbs. Choice the brown rice over the white rice flours, You can also use the bean, sorghum, amaranth and quinoa flours which are also high in fibers as well as carbs.
Almond meal and flax are lo carb but you would have to check and see if they cause any problems for your son. I had a child in my classroom who was on a ketogenic diet and had to really watch carbs. (It alleviated his seizures so it was definitely worth watching his diet!) So few people seem to realize what a huge impact diet has on our lives!
My son was on a GFCF diet for almost 2 years. But we noticed that the carbs really make a difference with him, so replacing flour with GF flour didn't make a difference.. When limiting flour period, he did better. But still, we really limit gluten. I think it messes with the body.
Welcome! It is definitely possible to do without flour. Pancakes and muffins can be made with almond meal and flax seed if you want to make them - or just eat plain fruit and vegetables and protein. There is plenty of good gluten free food!
Hello! I am Nae. We are not 100% gluten free, but we are mostly gluten free (about 90%). Gluten just makes me plain feel icky. My son eats some 100% whole wheat, but not much. We limit as much as possible. We are just trying to eliminate flour all together, even replacements for gluten because they just aren't healthy!
