Hi, I don't cook well at all, especially when I have to cook healthy. My husband pretends to like my cooking, but those kids don't pretend a thing!! What I do is find a few things I would like to cook during the week. Make a grocery list from that and keep a list on my fridge of possible meals. Sometimes I throw the dish together the night before and put it in the oven the next day after work. My kids act like they are starving as soon as I pick them up, so it is an act of congress to get a meal ready in an ample amount of time without loosing my patience!! I usually plan a meat, starch, and 1 veggie. I use canned or frozen veggies for the most part to save time. If you don't have time to fix your meals posted on the fridge, just add it to next week. I'm not a weekend cooker if I can help it!! Just start with a few simple dishes and work from there. Confidence is the key many times when it comes to cooking.
