I made something last night that my teen daughter loved. I cooked extra lean ground turkey breast in about a teaspoon of canola oil. Then I added a cup of chopped onion, a cup of chopped red pepper, a half cup chopped celery and let them soften up. Added a can of diced tomatoes with chiles and some chopped fresh cilantro along with all the Mexican seasonings that I'd normally put in tacos. I had some fresh homemade guacamole at home too. I had some yeterday as a taco salad with salsa dressing, and I had some this morning in a whole wheat pita pocket. My daughter goes for white flour tortillas, but at least I know the filling is vegie rich and good for her. I put half a dozen half cup portions in the fridge, and we'll have them over the next couple of days.
