I love Avocado. I do include them in my diet but not very often. I thought they were very High in Fat. It sounds like the nutrition outweighs the calories somewhat.

Mimi,
I, too, love avocados. The recipe sounds so good. I have a couple of avocodas which need to be used. Think I will give this a try. Thanks!
Have a healthy day!

No, I'm not, but I'm going to start including Avocado, DAILY, small amount because of the calories and good fats.
I actually LOVE avocado! Especially on a whole wheat bread (35 calories per slice).
I do eat it in my wonderful black bean salad. YUMMY!

BLACK BEAN SALAD

2 cans black beans, rinsed and drained
1 can whole-corn, rinsed and drained
5 (or more) tomatoes, chopped
green onion, chopped
AVOCADO, small, chopped
Olive oil
Salt and pepper
Lemon (or lime) juice

Mmmmmm
So colorful!

There's a reason these green fruits are called butter-fruit in Mexico - they mash up into the same creamy texture as butter.
Try them in soups as a thickening agent, and in mashed potatoes to provide a creamier texture as well as an added taste treat.
Interestingly, avocadoes and olives are the only two fruits high in fat - yet both are rich in heart - healthy monounsaturated fat.
