Fri, 2 Oct 2015 12:34:30 EST Today is World Vegetarian Day & National Kale Day Did you know that October 1 is World Vegetarian Day, the kickoff to Vegetarian Awareness Month? Of course many vegetarian recipes are not plant-based because they contain dairy or eggs. I'm a sucker for just about anything savory in the form of a pie, and a galette is SO easy. Believe me when I say you cannot fail when making a galette crust. For a filling, just about anything works. I like to use a tofu ricotta as a binder for greens, mushrooms, and onions. Thu, 1 Oct 2015 10:21:33 EST Food Waste Raise your hand if you're one of the many who buy food with the best of intentions only to have it outdate or rot before you used it. My hand is certainly raised. When I went grocery shopping when I was working, I usually bought extra cans of tomatoes or beans to have on hand "just in case." Today I threw away what was probably at least a couple of hundred dollars of expired cans that I had put on shelving in the basement and never used. Fortunately, some of the food was still within its "bes... Tue, 29 Sep 2015 15:46:46 EST McDougall Newsletter for September 2015 Dr McDougall addresses blood pressure in this issue. Mon, 21 Sep 2015 14:22:37 EST The Best Vegan Bean Chili per Serious Eats Kenji Lopez-Alt and his cohorts at Serious Eats always offer some of the best tips and recipes anywhere. This recipe for bean chili, for example, contains excellent information about dried chilis and why a paste made with them results in a complex, flavor-rich chili that cannot be duplicated by using chili powder and other dried spices. This recipe is somewhat time consuming, so it's not the best choice for making a quick meal to make after a busy day. That said, it freezes beautifully -- and... Fri, 18 Sep 2015 17:26:11 EST In Search of the Perfect Pot of Beans Beans are a mainstay of plant-based cooking. They are delicious, versatile, and full of nutrients. Cooking beans well, however, is not as straight forward as it might seem. Sometimes they’re mushy (overcooked); other times they’re crunchy or chalky (undercooked). Sometimes they seem to take forever to cook (old beans). Questions arise such as to soak or not to soak, to use salt or not, etc. Most agree, however, that high acid ingredients such as lemon juice, vinegar, tomatoes, chili sauce, ca... Evidently this problem has existed for quite a while, but the source was unknown until now. Here's another good reason to buy organic and locally sourced food whenever possible -- and of course to wash produce well, though that's not completely effective especially in the case of delicate herbs. You don't need to spend a lot of money on special ingredients in order to make good, plant-based dishes. For basic daily meals, however, eating a plant-based diet is incredibly versatile and fairly inexpensive. My husband and I decided to implement Rip's suggested workout, "The E2 Exercise Program," that he lays out in the Engine 2 Diet book. It only took us about 1/2 hr. to go through the three rounds of four exercises each, and I'm pretty sure we worked every muscle! Wed, 29 Jan 2014 12:58:47 EST Weight Loss? How much weight loss is the norm after starting a vegan diet? I suppose it depends on cals in/cals out. I'm following Sparks recommended calorie allowance although the exercise is still a bit sketchy right now. Has anyone reached their goal weight yet eating vegant? Fri, 24 Jan 2014 12:05:05 EST Quinoa washing w/o mesh sieve? Well, tonight we tried a quinoa recipe from the Engine 2 cookbook. Our Trader Joe's quinoa instructions said to wash and rinse carefully before cooking. It's so teeny, it just goes right through our sieve. I looked online, and you need a very pricey mesh sieve for the small grains of quinoa. We aren't in a position to invest in one at this time. Does anybody know of a less expensive alternative for washing quinoa? Thanks! 41 Wed, 22 Jan 2014 22:58:52 EST E2 National Challenge Starts February 4 Engine 2 Diet is launching a national challenge on February 4; many Whole Foods Markets around the country are hosting their own challenges as well. Tue, 14 Jan 2014 13:32:16 EST Plant-based Redux :-) Last spring, my husband, Ricky, and I watched the film, and were very intrigued.
