I'm on a 1200-1600 calorie intake right now, and I'm about to go from being vegetarian to being vegan (again). This time, however, I'm looking to be a healthy vegan-- not a junk food vegan like before. Before all I ate was vegan breads and pastas and junk foods and little-to-no veggies and fruits. But the worst part was, my B12/K2/D vitamins and magnesium were insanely lacking. I think after all of those years of eating wrong, it cause a lot of physical, mental and emotional issues for me... Mon, 27 Jan 2014 11:32:33 EST Getting to know you :-) I've been poking around a little, getting to know the board. My name is Stacey, I am a single mum to 3 boys, I work as a drug counselor and am going to school full time. About 6 months ago I went vegetarian and very quickly thereafter discovered I was uncomfortable eating any animal products at all. So I may not have set out to become vegan but here I am nonetheless! Looking forward to getting to know you all.
