Veggie Chicken Alfredo
8oz pasta (4 servings) - I used corn/quinoa pasta (angel hair)
1 lb chicken breast
1 tub butoni light alfredo
1 package of frozen broccoli
1 package of frozen peas
breadcrumbs (just a small amount to crust the chicken)
parmesan (from a shaker, just a small amount to crust the chicken and then top it)

combine breadcrumbs, parmesan cheese, and spices (salt, pepper, italian seasoning), and coat chicken. Cook in oven at 350 for 30 mins. Boil water and put pasta in, cook and drain. Microwave veggies until warm. Combine in bowl with chicken, veggies, and pasta, and pour sauce on top, and top with a little more parm cheese and pepper.
Serving Size: 6 servings - though you will probably want a side salad with for a meal!
