Sweet Chili - Slow Cooker

Ingredients 1 can 19oz chickpeas, drained and rinsed
1 can 19oz red kedney beans or black beans, drained and rinsed
1 can 28oz tomatoes with herbs chopped
1 can 10oz corn kernels, drained
mushrooms, as many as you like
2 large cloves garlic, minced
1 red onion, finely chopped
1 cup ketchup
1/4 cup liquid honey
3 tbsp chili powder
1/2 tsp cayenne pepper
1 green pepper, diced
1 red bell pepper, diced
1 yellow pepper, diced

Cheddar cheese, grated Nutritional Info In slow cooker, combine chickpeas, kidney beans, tomatoes, corn, mushrooms, garlic and red onion. In a bowl combine ketchup, honey, chili powder and cayenne; mix well and pour into slow cooker. Stir mixture to combine.

Cook and cover on LOW for 8 to 10 hours or on HIGH for 4 to 6 hours, until hot and bubbling. Add green, red & yellow pepper and cook on HIGH for an additional 20 to 25 minutes. Serve in bowls with a dollop of sur cream and grated Cheddar Cheese
