Never thought to add a baked potato as the base of a salad-dang that sounds good!

I usually have a large salad every day for my lunch. Current combo is spring mix and spinach, with mini sweet peppers, broccoli, tomato, onion, black olives, refried beans and then an ounce of sunflower kernels. Hot sauce and salsa for dressing.

For a traditional salad, I would use

romaine
chicken
feta cheese
onions
olive oil
pepper

my favorite " salad is

tomatoes
mayonnaise
garlic powder

for protein, I like

eggs
mayonnaise
diced green olives
squirt of mustard

One of my most eaten salads is a pretty basic salad with some hearty additions:
lettuce or spinach
carrots
peppers (usually green)
mushroom
red onion
cucumber
radish
chickpeas or black beans
a boiled egg chopped up
balsamic vinegar & EVOO to top

I also really like making taco salad with any leftover taco meat I have.
It's basically the same ingredients except with some shredded cheese instead of an egg and I cook the black beans in with the ground beef (great way to stretch your meat and bulk it up at the same time). I usually don't add anything to it,but you could put some salsa on top if you wanted.

Another good idea for adding protein to salads is to add shelled edamame.

Chickpeas, feta, tomatoes, red onion, cucumbers, fresh mint and cilantro. Dress with red wine vinegar, a little olive oil and S&P.

today I had a mixed salad of spinach, broccoli, cucumber, sweet peppers, mushrooms, tomato with some grilled chicken breast and cheese and apple.

Going to look to make a zesty italian dressing so that I can make that salad with the beans - all the italian dressings have so much sodium in them so will make my own this week instead.
