It's very individual. Some people can maintain without it or only with occasional tracking of food to make sure they are staying on track and some people need to do it frequently or they will gain weight back.

I used to use spark people religiously but it just became so tedious and just didn't fit my lifestyle anymore. That's when I found the 21 day fix, not sure if any of you have heard of it. But its a container system. If it fits in the container you can eat it. No more counting calories and worrying if I am eating the right things, since the meal plan tells you what you should be eating in order to maintain steady weight loss/maintenance. It is such a great program and changed my lifestyle drastically, since I no longer need to count calories. Now I mainly use spark people as a place to plug in my progress so I can keep track of inches and lbs lost and of course to communicate with awesome supportive people.

I gained weight again when I stopped tracking. But now when I look back, I see that I stopped tracking because I was tired and frustrated, not because I truly thought I would be okay without it. I still hope when I reach maintenance I can stop tracking, but I'm made my peace with it until then.
Same thing happened to me, lol. I hit my goal, and almost right away, I exercised less and less...old food habits started to creep back into my life...then "all of a sudden" I was overweight again. hmmm wonder how that happened?
Once you hit mainenance, you have to then look back and determine what worked best for you in losing weight. That is what will create a successful maintenance plan.
Some people do the plate method (ask if you don't know what that is). Some people, literally, just eat the same foods always that they ate while losing weight, some continue to track everything every day, some just track dinner, some just track on weekends, some don't track at all - but weigh themselves daily, and when they see a 5 pound increase, go back to tracking for a week or so.....
For every single person, it's a matter of trial and error to find exactly what works best for them.

The best exercise in the world is to bend down and help someone up.
Six years ago I lost 40 pounds on Spark while diligently tracking food and exercise. When I reached my goal weight, I stopped and the weight gradually came back on at a pace of about 10-15 pounds a year. This time around I'm going to keep tracking even after I reach my goal. It only takes a 10 minutes a day or so. Same with weigh ins once a week. It is just too easy to slip back into old habits, at least for me!
That's really up to you. Some people find that they still need to track daily when in maintenance, just to keep themselves in check. Others find that tracking a few days per week is sufficient, while some don't track at all. My advice would be to experiment to figure out what works best for you.
