Once you select the vegetarian meal option as ANARIE has shared; you can change any of the vegetarian food options to vegan.

Just click on the food and a list of substitutes will pop up, many will be vegan choices.

Go into "My trackers," then "My nutrition," the "edit nutritional goals. Scroll down the page and you'll find the list of options if you're using Spark Meal Plans. The first option (I think) is vegetarian. There's no vegan option because computers aren't sophisticated enough to develop a vegan plan that provides all your nutritional needs.
