Crust: Oopsie roll dough 3 ounces cream cheese 3 eggs, separated 1/8 tsp cream of tartar Preheat oven to 300 degrees. Beat whites with cream of tartar for 3-5 minutes or until stiff peaks form. In a separate bowl, mix yolks with cream cheese. Combine the two bowls carefully, folding ingredients together until just blended. Pour batter into 2 greased 9″ pie pans and bake for 30 minutes. Makes 2 crusts (this recipe uses only 1 crust).
Filling: 1 cup Alfredo sauce 1 cooked, chopped chicken breast 1 can Veg-All Preheat oven to 350 degrees. Combine filling ingredients. Pour into prepared, baked crust.
Topping: 1 cup mozzarella cheese 1/4 cup Parmesan cheese Top casserole with cheese and bake at 350 degrees until cheese is bubbly, about 30 minutes. Makes 8 servings. Nutritional Information: Calories: 460, Carbohydrates: 9 g, Fiber: 2 g, Net Carbohydrates: 7 g, Protein: 21 g, Fat: 40 g
You could probably use any thickened soup in place of the Alfredo. I'm thinking cream of bacon mushroom soup would be really good.

I use many of these tricks (crust-less, Shepard's pie style), but sometimes my hubby just wants his pie, crust and all. I've found that I can, however, roll the dough out to half the thickness, thus reducing the calories (in the crust) by half. This works for pot pies, but also traditional pies. I also trim off the excess at the edges rather than leaving a big overflowing crust.
The crust is usually what makes pot pies (and dessert pies) high in calories and fat. Look for recipes that use something different for the crust. I've seen some that use filo dough, mashed potatoes, sliced potatoes, and even spaghetti squash. There are also recipes that are more like a pot pie stew-- you make the same filling but either skip the crust altogether or just have a small piece of crust on top. And of course, you can always add extra veggies to the filling.
Most of the inside isn't too bad with lean chicken and vegetables. You can get the heartsmart bisquick mix and use that for the topping only instead of all the crust on the bottom and sides. Try doctoring up this recipe: recipes.sparkpeople.com/recipe-detail.asp? recipe=570812

I'm thinking about making a chicken pot pie for dinner tonight, but when I looked at the calories its was kinda high. I believe most of it comes from the flour/butter you put into it. Any ideas on how to make it healthier?
