This has been a hard month- for us we had an extra week of expenses and don't get paid more for that week so for sure we were short.
In times of plenty I stock up on things like spaghetti sauce or crushed tomatoes as well as discounted meats (put those in the freezer).
This weekend we will have pasta with diced veggies (on pasta for the kid and on veggies for me), chicken stir fry, chicken and potatoes with greens.
I also have a couple cans of re-fried fat free beans and some cheddar. I'll make a salsa and we will have burritos/soft tacos.
I have eggs too so we can have egg salad and breakfast for dinner.
Some of these are not low calorie so I have to really watch my portions.
We also have a big stash of apples and plums.
1st Goal: 18lbs by June 1 - Met goal on 4/28
2nd Goal: Onederland by July 31
