I love making philly cheesesteaks without the bread. I have also been making a lot of stir-fries with meat and at least 3 different veggies. Soup is always a good filler also (my favorite is a chicken and cabbage soup right now). You can make chili with hamburg, radishes and celery - tastes wonderful!
I'm also doing high-fat, lower-carb, and I do struggle to find things to bring to work, but here are some thoughts:
-Lettuce wraps with turkey and cheese slices -Mason jar salads -Cold baked chicken breast with raw veggie crudite (if you can deal with cold chicken!) -Low-carb wrap with avocado and fajita meat strips -Egg or tuna (or salmon if you're concerned about mercury) salad on cucumber slices -As another poster said, a bento box-style lunch... some nuts, olives, raw veggies, hard-boiled eggs, deli meat slices wrapped around pickles...
When I was doing low carb, I packed myself Bento-style lunch containers filled with various goodies.
My favourites were: shrimp with cocktail sauce, mini meatballs, smoked salmon, tofu, hard boiled eggs, olives, pickles, chopped veggies with blue cheese dip, avocado slices (tossed in lemon or lime juice for freshness), lunch meats and various cheeses.
I am going to be doing a 5 week training in a couple of weeks. Will be living in a dorm with a mini fridge & community kitchen. Not sure what the food situations will be at the schools we're teaching in. Trying to keep costs down & stick to my diet while away from home.
One caveat is that I am doing Low Carb High fat which means no grains or fruit. I'm supposed to be staying away from processed foods (most artificially low carb stuff is kind of disgusting anyway). Been doing salami & cheese bolstered by the occasional low carb shakes (NOT tasty but conveniant), but am afraid I'm get sick of it.
