So many factors come into play. It is true that higher protein diets and higher fiber diets can help with hunger control---especially when this protein and fiber are spread throughout the day. It is also true that your daily carbohydrate intake amount needs to be accurately determined and spaced appropriately throughout the day for blood sugar control. It is also true that the type of carbohydrates consumed is important and certain carbs can bring about cravings and excessive intake.
While all this is true---it does not allow us to accurately determine what you need to do to help with your cravings, your hunger, your blood sugar levels and your medication needs.
Please see your doctor, endocrinologist, Registered Dietitian or Certified Diabetes Educator for more on your meal plan, your food selections, the timing of your meals, your medication needs, etc, etc.
It is important to get your blood sugar level in good control. This is not happening if you are seeing 500-600 blood sugar readings in the evening. Having this relationship with your health professional will also be important as you lose weight and need adjustments in your plan. The adjustments can more easily be made since the health professional will already be familiar with your history.

I am no longer diabetic, but I have noticed that when I eat a very good breakfast with lots of protein, I tend to not have the urge to snack later at night. I used to have a terrible time with carb cravings at night--now I hardly ever snack at all and do not want/need to do so.
Another thing to remember is that the more you can keep bad carbs out of your diet, the easier things get. I find that my cravings go away if I stay on track and that if I indulge again it is hard to get focused again.
Being well hydrated earlier in the day also helps with late-night cravings.
I've gotten off most of my Rx for Type 2 but finding that if I take a full Amaryl in the a.m. I get low sugars in the evening. If I do 1/2 tablet my sugars are still high after eating and walking. Starts lowering by lunch. If I take Amaryl at night I do better in the evening and better sugar in the morning. I can't seem to find a balance that gives me decent sugar in the morning and keeps me from fighting lows all evening. My doctor is fresh out of Medical school and isn't quite up on diabetes-I think I need to switch to a more experience Doc. The one I wanted was out on a medical leave when I started.
Sugar spikes are difficult to deal with. Coffee sends mine up, green tea not at all. HUGE difference in limiting carbs for me. I am finding that protein helps hold my hunger at bay. Costco Kirkland Signature Oven Roasted Turkey Breast is delish. At 40 calories per slice (thick, real turkey breast) if I have a slice with a half slice of low fat cheese with green tea, I have been good all night.
I know as I lose, I will have to deal with the dreaded low sugar episodes. Never fun, leaves me weak.

You are right.... those don't relieve the bread cravings. But the cravings will go away over time....

I end up every evening with a problem. I have to avoid flour/grain-based carbs because my blood sugar SKY ROCKETS depending on what I eat and how much....we're talking 400-600 mgl. Not just a little bit. :-(
I do pretty well all day but by evening I'm just hungry. I get my carbs thru green veggies and a minimal amount of fruit. Dairy also sends blood sugar soaring. I'm left with very few choices.
Of course, I could inject enough insulin to eat what ever I wanted but my goal is to inject as little as possible. I have a track record of gaining a pound a day when inject a lot to cover a lot of carbs.
