Stir fry - just be careful with the soy sauce. Roasted or sauteed veggies. I've been doing rainbow salads in jars - chop up a variety of crunchy veggies and greens and put them in a quart jar with some dressing, shake well and enjoy. Taco salad, sushi, coconut curry soup (two cans of pumpkin puree, one can of coconut milk, curry powder to taste, heat and serve - great over rice or with rice and chicken on the side.)
But it really is hard to beat matzoh pizza... except maybe matzoh supreme nachos.

I make my regular healthy meals just using my Passover pots and pans...quinoa is Kosher for Passover...Omletts are great for breakfast without matzoh...I find it is a great time to back out of your starches.
HI there! Anyone have any good and healthy passover ideas to eat during the holiday? I feel like im going to get sick of roasted chicken very fast, and although its yummy, matzo pizza probably shouldnt be the only meal i can think of.
