I don't know if any of these foods are in the Spark database, but you might be able to enter some of these or some of your own. If you go to Sparkrecipes.com and use the Add/Calculate Recipe feature, you might be able to construct your dishes and then save them.
I really like Middle Eastern food but can't get it where I live, so if you have recipes to enter in the shared database on Spark, I, for one, would love to try making them.
Do you cook the food yourself? For example - instead of looking for Koshari you might put in the ingredients individually - lentils, rice, pasta, tomatoes, onions . It would take more work, but you can save them so you can use them again. Sometimes too I use the option to find calorie counts other spark people have entered on their own and after comparing a few i go with the numbers that are similar.

I second the idea of Googling it. There are translators all over the place which will convert at least some of your foods - the names, at least. I find that even within the English language, conventions for how certain foods are named can be very confusing.
If you enter the nutritional information you find and "share" it, we'll all have access to those things!
