Sounds good! I usually add chopped nuts to muffin recipes; extra calories, but worth it IMO. I'm going to try these.

As a breakfast lover I have been looking for a way to make a muffin that has natural ingredients, is somewhat high in protein, has flavor and is still yummy. Not super sweet but, still good. After tweaking the Whole Foods Carrot Muffin Recipe here is what I came up with. According to a recipe calculator for 12 muffins here is the nutritional info:

Calories - 125
Protein- 5
Sugar- 3
Carbs- 15

1 1/4 cup whole wheat flour
1/4 cup stevia
1 teaspoon ground cinnamon, nutmeg and ginger
1/2 teaspoon non-aluminum baking powder
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1 cup grated carrots
1/2 cup unsweetened applesauce or one whole medium apple shredded
2 eggs (one whole egg one egg white)
1/4 cup milk ( I used whole milk)
1/4 cup canola or safflower oil
1 teaspoon real vanilla extract
I scoop of whey protein ( I used a vanilla flavored one with 120 calories per scoop).

Cook at 350 for 11-12 mins.
