Sweet potatoes are one of my favorite vegetables, I approve. My mother-in-law made a rasam (a thin south Indian lentil-based "soup" yesterday that was absolutely amazing, with tomato and cilantro along with the usual spices. Really really fresh, in-season oranges. Or peaches. The first greens of spring, cooked south-indian style with black mustard seeds, coriander powder, asafoetida,etc. Beets cooked the same way, with shredded coconut. So good, all of them.

Yes, they are starchy. I keep my starchy carbs on the lower end, so maybe that is why they made me weep with joy :-)

mmmmmm yes -- roasted sweet taters! Lovely things. I have to be careful, it's still pretty starchy. But they're incredible. Nevermind 'tater chips - just roast me some sweets!

The other day, I peeled and sliced a sweet potato, tossed the slices in a little melted ghee with thyme, salt and pepper. I roasted them in a hot oven, turning once, until the slices caramelized.

I think I actually moaned aloud when I ate it. It was a sweet potato. And I think I asked it to marry me.

Any very healthy food that makes your knees buckle?
