Depending on the buffet you go to they can be a perfectly healthy choice, but of course you have to decide what to eat when you go, but that is true of any meal choice.
Each one has its own variety, but the big buffets close to me have a Mongolian grill (where they cook the raw food you give them). I have them leave off the soy and so all I get is sauteed veggies and meat.
They also have large salad tables, as well as a carving station part of the time with pretty lean roast beef. Add to that peel and eat shrimp and a couple of steamed veggies and you have a great meal.
