Mum used to pickle red cabbage - it is DELICIOUS, especially with tasty cheddar cheese on wholegrain, or as a side to cold meat.

Below is a link for a recipe very similar to how she made it. She used to shred it a bit finer than that, tho'!

My very favorite lunch salad - sounds weird, but it's delicious: red cabbage (i like it cut in bigger pieces rather than shredding), about 10 baby carrots cut in half, 1/4 c. shredded parm, 1/2 oz walnuts, dressing is red wine vinegar and 1 packet of Truvia. Heaven!

2 tbsp. vegetable oil
1/2 onion, sliced
1/2 apple, peeled, cored, chopped
4 cups thinly sliced red cabbage
1/4 cup diced Canadian bacon or regular low sodium bacon
1/4 cup apple cider vinegar
1/4 cup sugar
1/4 teaspoon celery seeds

Heat the oil over medium to high heat. Add the onion and chopped apple and sauté about 7 minutes. Add cabbage, vinegar, sugar and celery seed and cook until cabbage is tender..... about 10 minutes. Mix in bacon. Season with salt and pepper to your taste.

I make an Asian peanut chicken salad with red cabbage:
