I'm a banana fanatic, too, alas. Right alongside the other sugary fruits, like pears and apples and melon and plums and grapes and strawberries.... yum! But there's too much sugar in them, and I can't have much.
I'd portion out bananas like you are doing, but I only like them *just* ripe - maybe some light speckles, but not brown parts or soft. So if I can't eat the silly thing right off, I have to toss it because I simply won't eat it when it gets fully ripe. And I'm not allowed breads, so I can't make muffins or banana bread out of them. I just have to limit myself to buying ONE banana now and then and having it as a special treat. The produce department is a major temptation!
