I worked a 5-1 a.m. shift for years. What I did was eat breakfast around 11 a.m., and then take a nap. Wake up at 3:30, cook lunch, and go to work at 5, after lunch. I would have a snack at work around 9 p.m., and eat dinner at 1:30 a.m. when I got home. The time does not matter. As long as you are eating the proper amounts every 24 hours, it doesn't matter if it is from 6 a.m. - 8 p.m., or 11 a.m.- 1 a.m.
I didn't get to sleep till 3 a.m. , so I sure wasn't going to wake up at 6 or 7 a.m. just to eat breakfast at the right time. Snacks that you can keep in your car are a big help getting through the day with. Sometimes I would have 2-3 snacks, instead of a meal, in a pinch.
Eventually you find a system that works for you.
