Apple slices, particularly tart green apples. Not a veggie, but really good with pb.
I don't know what other veggie would work with pb as a dip... maybe cucumber? I'm thinking i really like cucumber with hummus, and hummus is kind of similar to pb (savory/salty)... so maybe...?
Now this isn't exactly "dipping/spreading" but.. other ways to combine peanut butter with veggies could include a salad with a peanut dressing... I made an awesome salad once, that incorporated chopped raw bok choy and other assorted vegetables, fresh pineapple chunks, and a peanut dressing made out of basically peanut butter and soy sauce.... it was based on this recipe, which didn't get the best reviews I see, but, I liked it! www.chow.com/recipes/30351-bok-choy-and-pi
