bananas, carrots, celery, avocados, tomatoes...but my favorite is a plain old peanut butter sandwich (on whole wheat bread) and don't forget to butter the bread prior. And if your daily calorie range allows for some more fats add some (Kraft) mayonnaise...I know it sounds terrible but it really is tasty.

I'm not sure there are many others that go well with peanut butter, but lots of fruits are good with PB! Bananas or apples are good alternatives that don't add a ton of calories and also provide another serving of fruit to your day. I personally like to eat a sliced up banana on top of PB on a sandwich thin.

Apple slices, particularly tart green apples. Not a veggie, but really good with pb.
I don't know what other veggie would work with pb as a dip... maybe cucumber? I'm thinking i really like cucumber with hummus, and hummus is kind of similar to pb (savory/salty)... so maybe...?
Now this isn't exactly "dipping/spreading" but.. other ways to combine peanut butter with veggies could include a salad with a peanut dressing... I made an awesome salad once, that incorporated chopped raw bok choy and other assorted vegetables, fresh pineapple chunks, and a peanut dressing made out of basically peanut butter and soy sauce.... it was based on this recipe, which didn't get the best reviews I see, but, I liked it! www.chow.com/recipes/30351-bok-choy-and-pi neapple-salad-with-peanut-dressing

Peanut butter is a bit like tahini. So you can put some chickpeas in a blender,add some peanut butter, maybe some olive oil, some chili pepper - and blend it up. It's good for dipping or just spreading on some pita bread. If you find a combination of flavors you really like, you can add it to some cooked veggies as a sauce. It definitely will add more fiber than a standard dip.
