Since summer is over and I can't get the local salad vegetables, I am making the WW 0 Point soup using fall and winter local veggies.

You can use whatever vegetables you like, I use canned tomato not tomato paste
leave out the mushrooms and broccoli and add zuchini and some Italian seasoning.

It's healthy, easy, low carb & low calorie

My mom made a homemade vegetable soup, which she taught me how to make. There is no meat or dairy in it at all, a perfect soup for a non-meat eater. I take it for lunch and fills me up.

Hey Everyone,

It's getting cooler outside and in some parts of the country it's downright cold. Brrrrrrrrrr. So it's the time of year to start thinking about SOUP!

Soup is a great part of any meal plan. It's warm on these cold autumn and winter days and it fills you up without a lot of calories. I make several soups and freeze them for quick and easy meals. I choose to make my own soups for a few reasons.

1, It's cheaper than buying canned soup. A serving of soup costs me between 17 and 25 cents for the ingredients.
2, I can control what goes into my soup. I know how much salt, spices, etc... go into my soup and that most of the ingredients are clean or organic.
3, I can control the portion size. This is really important. I pre-measure the 1-cup portions into containers and freeze them. Then I can pull out as many as I'm going to need for the next few days and thaw them in the fridge.
4. Adds a touch of class to my meals. I make my meals an event. I have a soup course, a salad course, an entree and later a desert. Eating this way extends meal time which in turn allows my body to feel fuller sooner. Each portion is smaller and the heat from the soup does something to get my digestion going sooner.
5. Soup and salad or soup and sandwich are great lunches.
