I LOVE my slow cooker, and agree with previous posters: you can totally live out of a crock pot, and enjoy it!
I've made roasted chicken and potatoes, chili, soup, rice and beans (as a meal or as tortilla stuffing), oatmeal, apple crisp, pot roast, meatballs, lasagna, etc, etc. etc. There are some great blogs on the internet for crock potting.
There was one lady who did a different crock pot recipe every day for a year - yes, 365 days in a row! I think she ended up writing a cookbook from her experience, but you can find the blog and get the recipes there for free if you just want to try. I think one of her kids was gluten intolerant, so she even had adjustments for that.

You can cook virtually anything in a microwave as well! If you have a chance, hit the local library for some good Microwave cookbooks (or your local Thrift Store...)
I have done complete Turkey Dinners --yes the turkey browns; just not quite as nicely as in an oven-- and I always do my veggies in the microwave. Although most items cook more quickly, Noodles, rice etc take just as long as stovetop because the time is needed to absorb the liquid. But they cook up just fine. Baked type goods look rather anemic though as they don't brown very well...but Chocolate Pudding cake--oh my!
One note: many of the microwaves now don't have as much power as the earlier ones, so if you have a little, newer one A) the turkey won't fit LOL and B) will take almost all day to cook! Bon Apetite'! patti

One of my favorite and easy standby meals is in the Spark cookbook - Slow-Cooker Salsa Chicken, then I serve over brown rice and often add in black beans, different things that also turn it into leftover lunches and/or extra dinners. Also freezes well.
Wrap clean baking potatoes (or other types) in aluminum foil. Pile them all into the cooker, turn on high OR low setting. Put the cover on and wait. Depending on your cooker, your setting, and the number of potatoes you have in there, you can check from time to time and see how far along you are in 'baking.' My favorite way to make a lot of potatoes for mashing, eating with toppings, or adding to a soup. Get them at the right time if you're going to be using them for potato salad or hash - you don't want them to be too mushy.

Depending on how many people you're trying to feed, a good sized pot roast (with many veggies) will last 2-3 meals. Get a bag of the 'ready to steam' sweet potatoes and you've got a big dinner. Or beef stew in the crock pot.
