It takes about 5 minutes to make homemade corn tortillas. I am Hispanic, but in my cultures (Spanish and Argentinean), tortilla is an omelette with potatoes. Corn tortillas are not Hispanic, they are particular to Mexico. Other cultures in Central America have corn-meal dishes too, but in the rest of Latin America, tortilla=frittata.

Anyhow, all you need is a bag of dry masa harina, a tortilla press (prensa), a couple of plastic bags (quart size), a bowl, hot water and a griddle (comal). I make mine in a shallow Lodge Logic cast iron skillet.

Put the skillet on a burner and turn it to high. Leave it dry--no oil or fat of any kind. Mix the masa with very hot water as indicated on the package. Mix and knead for a couple of minutes. Cut the dough (masa) into the number of pieces that the package indicates. Put a plastic bag on the prensa, then the dough, then another bag, then press. Flip the tortilla onto the hot griddle for about 30 seconds, flip and cook for one minute, flip again and cook for 30 seconds more if desired.

In 10 minutes you can make 5-6 wonderful, fresh tortillas. If you can get fresh masa, that is amazing...but I have never seen that outside of Mexico. If you keep the dry masa harina in a plastic container, it will last for years.

Just one person recommends something homemade?
Make your own fresh. There are lots of recipes out there on the net (I do have a spinach tortilla recipe but I haven't tried it).

I use flatbreads sometimes. It is hard to get a lot of organic/homemade choices here in Alabama. I could get in Oregon.

I live in a mostly hispanic community in southwest Det. Mi. you cant go to a little corner store on market that doesn't have a dozen different kinds , some are wrapped without a name , some are still warm if you
go at the right time of day. Corn or flour they are so fresh and yummy. Hasienda is one of my favorite white corn brands , only 60 cal. for 2.
Also from the big market chains , I get La Tortilla Factory high fiber wheat tortilla great for wraps and only 80 calories for a large one and a whopping 12 grams of fiber. Love em!

I buy 100% corn tortillas which are made locally. We don't have a significant Hispanic population in my area so there aren't Latin-American grocers; I pick up my tortillas at the health food store. The fresh tortillas are made from white corn; if I want to buy yellow corn tortillas I have to go frozen (http://ca-en.quepasafoods.com/product/corn-tortillas).

For those of you watching hydrogenated oils and palm oils, you might want to take a closer look at those "healthy" tortilla ingredients.

I love wraps, but it was unsettling to discover that most of the tortilla brands I used to buy (Mission included) contain a CRAPLOAD of ingredients, including hydrogenated oils, that I had no desire to ingest. So I started making my own tortillas at home and buying tortillas with more natural ingredients in them from Whole Foods.

I don't know where you live and if they are only regional to me, but I swear by Maria and Ricardo's. They are Massachusetts-based, using organic flour, and a family operation. I know they have expanded marketing and distribution since I was a kid but I don't know how far that reaches. I get them in my local Shaw's.

Mission is a gigantic company and I don't like to support that kind of thing, personally, and since they don't pledge no GMO or organic, who KNOWS what's in there?

OP, you are talking about big flour tortillas, right, not the small corn tortillas?

I never eat those, so I do not have any helpful advice. With corn tortillas, I either make my own (dead simple if you have a prensa) or buy whatever is cheapest and comes in the smallest size package.

With the exception of Mission brand (which I personally don't like), tortillas are a very local or regional thing. When I move to a new place with different brands, my strategy is to go to the store at a busy time and spy on what other people are buying, or better yet, get Mexican grandmas to spy on me. If you stand there in front of the display looking puzzled, sometimes you can get three or four abuelitas to come up and give you a whole seminar. "These are the best for tacos and enchiladas because they don't break. Those have too much salt. This brand makes the best-tasting ones, but they're ugly, so don't serve them to company." My favorite was the lady who said, "These are so good, I don't even make my own anymore. I buy these, sprinkle some masa harina around the countertops, and my family has no idea I didn't spend all day in the kitchen!"

If you're looking for wraps rather than homestyle tortillas, go to a store near a gym at about 6:30 and see what the ladies in workout gear are getting.
