Harlequin Salad: Can of beets, drained and diced; 1/2 diced onion; a glop of mayo. Mix and eat.
Another great salad: Can of drained sliced beet, combine with a can of drained mandarine oranges and some thinly sliced onion. Dress with balsamic vinegar, nuts and shavings of parmesan.

I love beets just about anyway - pickled, warm with butter or just straight out of the can.

All I ever do is simmer like potatoes until tender, peel, slice them up add a bit of butter and salt/pepper! The fresh ones taste SO much better than canned ones!! I know many folks like them with the vinegar, etc, but to me that just covers up the flavor of the beets!

Another way to enjoy them is in a Borsch (sp?) Soup....! Had a really wonderful one that a Ukrainian friend up in Canada made....!

Beets are one of my very favorite foods. I love them any way I can get them. Canned is my least favorite way. I love fresh beets pickled with onions, vinegar, sugar, water and a bay leaf. I also love them roasted with some olive oil and salt, pepper. Yummmmmmmmmm

I use one can of beets per week. They are so good drained and put into a greek salad. Your favorite salad greens, chick peas, beets, feta, kalamata olives, onions, tomatoes, cucumbers, and a home made dressing of 1 Tablespoon olive oil, 3 tablespoons of red wine vinegar and a spritz of lemon juice and a dash of salt. mmmm.mmmm.

You can also pickle them. Drain the red liquid into a measuring cup. However much liquid you have in the cup, is how much vinegar you will need, and how much "sugar" you will need. 1/3 cup beet liquid, 1/3 cup vinegar, 1/3 cup sucralose (like granulated splenda). Put into a jar and they are pickled by morning. You can add a stick of cinnamon too, if you like. I eat them straight, or in a salad.

I am just learning about beets, never ate them before but once so I am not sure about the blending vs juicing.

Gosh almighty. I love beets. I also eat beet greens. They are so good with just a little salt. Thanks for the link share. I learned even more about beets.
I lost 30 lbs. on a good diet plan where I included beets.

Does blending something remove fiber? I didn't think it did. Am I wrong? I guess if you 'juice' something in a juicer, it does have fiber removed. But if you just blend the heck out of it so it's drinkable, I think you must still be able to get the benefit of the fiber.

If you eliminate the "bulk" of beets (juicing vs. smoothie), then you are most likely back at the top of the glycemic index because the fiber is removed.

I saw a Dr. Oz show once where they were making beet juice vs eating them, they added some extra thigns in there to make them taste better. I wish I could find that episode. emoticon

At least according to this info. the idea that beets are "sweet" has nothing to do w/ skewed tasted buds. (I have never eaten a "sweet" beet.) -- Look at the info. re. Glycemic Load!

Anyway, just made up a batch of from-the-garden, roasted beets w/ onions & grapeseed oil drizzled over the top. Yum! And wonderful the next day, sliced over greens w/ feta cheese!

Beets are sweet from all the sugar in them. I don't eat them much, since they are high glycemic, but when I do, I eat them straight out of the can, like Pringle's chips.

I count them as a dessert/cheat food, but the very fact that you cannot taste how sweet they are, means your taste buds are jacked up. You consume too much sugar and salt. The fault is not with the beets, but with your diet, and taste buds, unless the can of beets was spoiled, which I doubt.

Allrighty, well I tried them last night. Lets just say I felt like I was eating worms. Not that I have ate worms before but if I were to, I learned last night how they would taste. I think i need some stronger seasoning, I am not completly ready to give up on them. My husband liked them of course. emoticon emoticon

It all depends on the person's preferences and taste buds. We don't buy canned ones, but on our steamed, fresh ones we normally add vinegar or even just a little salt with some pepper.

Season the liquid from the canned beets (and the beets themselves) with some vinegar and maybe even a cinnamon stick or a few pickling spices. Put some hard boiled eggs in a clean jar in the fridge,with the beets and with enough 'juice' to cover them. Then wait a day or two. Eat the pickled eggs and the beets cold. Yummm. (also, google 'pickled eggs' for more specific spices than what I mentioned...)

Some folks put a tablespoon of cider vinegar in the container to spruce them up, but I eat them as they are and they taste just fine, a quick way to get your veggies. Just make sure the ones you buy do not have added sugar.

I've never used canned beets but I use beets in baking and cooking a bit. I'll grate the beet and put in with ground beef and other chopped/grated vegetables like celery, carrots, onions, spinach and garlic and appropriate spices for things like taco filling, spaghetti sauce and Shepard's pie.

I'll boil beets until soft and the blend in a blender until smooth and add it to chocolate desserts. Because beets are sweet you can cut the sugar and you can't tell they are there!

Beets, lettuce, feta cheese and balsamic vinegar make a nice salad.

You don't have to eat the whole thing.

Put the beets on a baking sheet and drizzle with 2 tablespoon of vegetable oil. Season them with salt and pepper and then toss them until well coated in oil, salt and pepper. Bake about 15 minutes @350 degrees.

Beets are good in a tossed salad.....Sliced beets, sliced onions, and Plain yogurt also make a good salad.
