eggs eggs eggs i have been enjoying lots and lots of eggs. i have branched out from "eggs and toast" though... what I find I really enjoy is sauteed veg (any kind, really), once the veg are soft, scramble in 2 eggs. Sometimes I'll top with a bit of parmesan cheese, or a scoop of salsa. I do not miss the toast. It's not exactly a "conventional breakfast" but I find I really like a savory breakfast now, and it keeps me full a long time.
Yogurt and fruit with raw oatmeal mixed in, left to soak overnight ("overnight oats"). Makes the yogurt just a bit more "sustaining" and adds a nice texture... it's a great base from which you can add any sort of fresh or frozen fruit - i never get sick of this, as I change my fruit along with the season.
don't be afraid to delve into "last night's leftovers" either! Who says you can't have leftover soup or some chicken and butternut squash or *whatever* you have on hand! I have found that "breaking out of the meal 'rules' " has been very enjoyable and liberating, adding a lot of variety, interest and satisfaction to my Food Life.
